Healthy Cinnamon Apple Skillet Recipe

Today we're letting you in on one of our all-time favorite side dishes just in time for the holidays! This Thanksgiving themed side dish is guaranteed to be a fan and family favorite. Think of this recipe as as a healthy & vegan apple pie without all of the crust. Plus, it's super simple and quick to whip up! We topped ours off with a delicious scoop of Dairy Free Coconut Milk ice cream & an extra dust of cinnamon. P.S we think this recipe would look great paired with our "Cool Grey" hemmed linen table runner.

Ingredient List
- 4 large apples, peeled, cored and sliced into even ¼ inch slices
- 1 tablespoon vegan butter or coconut oil or ¼ water (for water saute)
- 3 tablespoons coconut sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 teaspoon arrowroot or cornstarch
- ½ cup (113ml) cold water or apple juice/cider
- Vanilla Ice Cream (optional) We used the So Delicious - dairy free vanilla bean as a dairy free substitute
Directions
Step 1. Heat butter or oil, over medium heat, add apple slices and saute for 6 minutes.Mix the cold water and cornstarch, set aside.
Step 2. To the apples, add the sugar, cinnamon, vanilla and water mixture, and stir to combine. Continue cooking at a gentle boil for 2 – 3 minutes, stirring occasionally, until apples are fork tender.
Step 3. Let cool & Serve! We suggest adding a scoop of dairy free or regular vanilla ice cream + a dust of cinnamon on top!
